Many of us seek ways to include healthier food items in our meals. Foods that are less fatty and lower in calories are often assumed to be less flavorful and unsatisfying. But high quality fresh vegetables are easily found, and when prepared in the right way - without overcooking and with the addition of simple, healthy seasonings and flavors - the result can be wonderful.

This preparation for fresh green beans could hardly be simpler. It’s fast and anyone can do it - making for a great side dish or an excellent addition to a delicious salad. Try it with an equally easy-to-make vinaigrette dressing - or mix freshly grilled chicken breast meat with your salad for a tasty, filling and healthy main course. Bon appetit ⧫

Fresh & Flavorful Green Beans

(4 servings)

A delicious and healthy side dish or key ingredient in a wonderful salad. Cooking time: 12 minutes.

INGREDIENTS

  • 1 pound fresh organic green beans

  • High quality Extra Virgin Olive Oil

  • Salt

  • Freshly ground pepper

EQUIPMENT

-Saucepan

-Small baking or cookie sheet

-Oven, pre-heated to 350° F

DIRECTIONS

In a small saucepan, bring to boil 2 cups of lightly salted water. Add the green beans and leave for no more than 2 minutes (remove at 90 seconds for slightly more than el dente firmness). Then pour the contents of the saucepan into a small strainer to remove the water. Place the green beans onto the cooking sheet, loosely separating them. Then drizzle evenly a light application of extra virgin olive oil. Add salt and pepper.

Place green beans in the pre-heated oven for 10 minutes. Serve immediately - and enjoy!
